The Assignment
We were tasked with creating a chicken product from wooden breast meat. Wooden breast is a myopathy that is characterized by hard fillets of breast meat and white striations, along with an accumulation of interstitial connective tissue. Wooden breast meat has a poor texture post-cook and is not the first choice for consumers. Since wooden breast meat is frowned upon by consumers, it is frequently downgraded and further processed which leads to economic losses for the companies. Since there is no current solution for wooden breast, as the exact causes are unknown, it is important to find a way to negate economic losses for companies by turning a poor quality product into a new chicken product!
